Portland, Oregon · roasting since 2016

Roasted Tuesday. Shipped Wednesday. On your counter Friday.

We buy small — one lot at a time, from farms we have visited and paid directly. Every bag is stamped with the day it came off the drum, because coffee is a fresh product and most of it is sold as though it were not.

You choose the rhythm, we choose the coffee — or you choose that too. Either way it is roasted to order, not pulled off a shelf. Every delivery is $32, and that price does not change when the coffee does.

Northbound against the aisle

What you are actually comparing.

What we pay for green →
What is in the bag Northbound A supermarket tin
Roast date Stamped with the day it came off the drum A best-before month, which says nothing about when it was roasted
Time from roast to your kitchen Packed within 24 hours and shipped the next day Roasted, warehoused and distributed before it reaches the shelf
What is in the bag One lot, one farm, and the farm named on the label A blend, with no farm named anywhere on the tin
What the grower was paid $5.10/lb FOB on our Ethiopian — 62% above the C-price Not something a tin tells you
Who picks the coffee You do, two origins at a time, or the roaster does that week A buying desk, working to a price and a volume plan
Ground or whole bean Ground to your brewer the day it ships, or left whole Often pre-ground, so it is staling from the moment it is packed
What the price buys A named lot, roasted this week, at $17.50 to $23 for 250 g A lower price per gram, for coffee of unknown age and origin

Our column is our own labels and contracts. The other column describes what a tin can tell you about itself, not one particular product.

The roastery · North Interstate Avenue

Two roast days, one drum, and a lot of cupping.

How we buy →

The week, from order to carrier

  • Mon 18:00Orders close and the Tuesday roast list is set. The green is weighed out the same evening.
  • Tue 06:30Drum on. Batches of 11 to 13 kg on a 15 kg Loring, filter and espresso profiles logged separately.
  • Tue 16:00Bags packed and stamped with the day they came off the drum — inside 24 hours, always.
  • Wed 07:00Every production batch is cupped blind by two of us, then the carrier collects.
Loring S15 Falcon · 15 kg

The drum

Small enough to taste the difference between one batch and the next, and large enough that the shop and the wholesale accounts are drinking the same roast.

Wholesale · cafés, restaurants and offices

A standing order that arrives on the same day every week.

Roughly a third of what we roast goes out on wholesale. That means we hold stock for our accounts, roast to their schedule rather than ours, and answer the phone when a grinder dies at 7am on a Saturday.

  • Wholesale pricing from 6 kg a month, in three bands
  • Free local delivery in Portland, and freight elsewhere in Oregon and Washington
  • Net-30 terms after the first two orders, invoiced monthly
  • Barista training at the roastery, and a dial-in visit when a lot changes

From a subscriber in Sellwood

“I stopped buying supermarket beans in the first month. The bag tells you the roast date, which sounds like a small thing until you have bought coffee that was roasted last spring.”
Dana · Sellwood, Portland

Next roast is Tuesday

Coffee that reaches you while it still has something to say.

Order by Monday at 6pm and your bag is roasted on Tuesday, shipped on Wednesday, and drinking well by the weekend.
