A natural Ethiopian that behaves itself. Dried slowly on raised beds for eighteen days, so the fruit is jammy rather than fermented, and it cups like blueberry compote over jasmine, with a cocoa-nib finish that keeps it from turning syrupy.

Best as filter — V60, Chemex or a batch brew — between 7 and 28 days off roast. It also makes a striking single-origin espresso if you are willing to grind coarse and pull it long.
